Turkey breast is brined in salted water for at least 3 hours (or overnight), then patted dry and rubbed with olive oil, pepper, sweet paprika and herbs. It is roasted at 240°C for 20 minutes and left to rest in the switched-off oven for at least an hour. The result is tender and flavourful both hot and cold. Asparagus tips are boiled in salted water, drizzled with olive oil and served alongside. A whole breast can be cooked and portioned for the family or frozen for easy meals throughout the week.

Eat breakfast no later than half an hour after waking up.

  1. Prepare the turkey breast in advance. Soak it in strongly salted water (about 2 tbsp of salt per 0.5 litre of water) and place it in the refrigerator for at least 3 hours, or overnight.
  2. Later, remove the meat, pat it dry and rub it with a mixture of spices and olive oil. For the spices, use pepper, sweet paprika and your favourite herbs.
  3. Roast the meat in a 240°C oven for 20 minutes.
  4. If you roast it in the evening, you can leave it in the switched-off oven until the morning, do not open the oven door. If you roast it in the evening for the same day, do not open the oven after cooking; let the meat rest inside for at least another hour. Prepared this way, the breast is delicious both hot and cold.
  5. Roast a whole turkey breast, then share it with the family, or divide it into portions and freeze for lunches or dinners throughout the week.
  6. Boil the asparagus tips in salted water, drizzle with olive oil and serve with the turkey meat.
